Easter Eggs

In honor of the J-man’s autonecromancy, my usual daytime study haunts were closed today. Margot had the bright idea of a whole day of egg-themed meals for Easter.

For dinner, we cooked up some Tamago Nigiri (above). I have made sushi before, but this was my first time making tamago. And it turned out pretty well.

For lunch, a spinach and tofu rice bowl with poached eggs on top.

I deviated from the recipe I found in using extra tofu, and in marinating it in balsamic vinegar before cooking. I also used basmati rice instead of brown.

Our only original, which was also the day’s highlight, was Margot’s breakfast idea: a Croque Madame on French Toast.

Basically, it’s just a grilled cheese sandwich on French Toast with an egg fried on top. If you try it (which you should), make sure to put a some sugar in the French Toast batter. We used cheapo sharp cheddar, but I’m guessing a more authentic Croque Madame using Gruyère would be pretty good too.
